Cuban Black Beans and Rice

2 cans black beans (do not drain)
1 1/2 cans water
2 cloves garlic, minced
1 medium onion, diced
1 bell pepper, diced
1 bay leaf
1 1/2 tsp garlic powder
1/2 tsp oregano
olive oil
1 cup diced ham (or 3 strips bacon, cubed)

Saute garlic cloves, onions, and bell pepper until onions are translucent and lightly browned. Add un-drained beans and cans of water. Add spices and ham/bacon. Bring to boil over medium heat and cook for 30 minutes, stirring occasionally, until thickened some. Remove bay leaf before you eat! Serve over steamed rice.

Garbanzo Beans and Rice

2 cans garbonzo beans (do not drain)
1 1/2 cans water
1 can (14 or 15 oz) tomato sauce
1 bell pepper, diced
1 medium onion, diced
1 large potato, peeled and cubed
1 cup diced ham
2 cloves garlic, minced
1 tsp garlic powder
1/4 tsp cumin
1/4 tsp oregano
olive oil

Saute garlic, onion, and bell pepper until onions are translucent and lightly browned. Add beans, water, tomato sauce, ham, potato, and spices. Bring to boil over medium heat and boil for 45 minutes, stirring occasionally, until mixture has thickened some. Serve over steamed rice.

4-5 lbs. boneless pork shoulder roast, rolled and tied
Allow roast to stand 20-30 min. before grilling.
Season the meat with salt and pepper.
Grill fat side up over indirect medium heat for 3-4 hours until internal temperature is between 185-190 degrees.
Place on platter and loosely cover with foil.
Allow to rest for 20 minutes.
Pull pork into shreds with fingers or 2 forks discarding bits of fat.
Moisten w/ sauce (below) and mix well.

Sauce:
3 tablespoons butter
1/4 cup minced onion
1 1/2 cups ketchup
3/4 cup firmly packed light brown sugar
1/2 cup yellow mustard
1/2 cup cider vinegar
3 teaspoons Worcestershire sauce
2 teaspoons Tabasco sauce (I sometimes omit if I don’t have it on hand)

Over med. high heat in a small sauce pan, melt butter and cook onion, stirring occasionally until translucent.
Add the rest of the ingredients and bring to a boil.
Reduce heat and simmer for 10 min.
Set aside and allow to cool to room temperature.
Grill hamburger buns until lightly toasted.
Serve the pork warm with sauce and coleslaw on the side.

Mojo Pork

http://thesportsinjuryclinic.org/event.php Mojo seasoning sauce can be found in your ethnic aisle. It’s a Spanish style seasoning if I remember correctly, frequently in a plastic bottle.
Pour over a Boston butt pork roast (in your crock pot) and cook on low all day…
Put on your choice of bread and eat like a sandwich! DELICIOUS :)

Crockpot Pork Tenderloin

Ingredients:
Pork tenderloin (Or you can cut a regular loin into smaller pieces)
Canned black beans
Ro-Tel (your choice of heat level; we use mild)

Directions:
Sprinkle pork with salt, pepper, garlic powder, onion powder, and dredge in flour.
Brown meat in oil of your choice. Don’t cook it, just brown the outside for flavor.

Place pork in bottom of crockpot. Pour however many cans of black beans you want over the meat. Pour 1 can Ro-Tel over the beans. (We only use the juice from the Ro-Tel because adding the actual tomatoes and chiles is too spicy for my mom.)

Turn crockpot on high until mixture is bubbly (it takes awhile) then turn on low and cook for 3-4 hours or until pork is very tender. Serve with rice and a salad.
